Turn over almost any packaged food and you will find a list that mixes the familiar with the cryptic: sugar, salt, then "E330", "emulsifier (E322)", "preservative". For a lot of people those codes trigger a vague unease — a sense that the food has been tampered with. In reality an E-number is closer to a stamp of approval than a red flag. It tells you that a substance has been assessed by regulators and permitted for use. Understanding what additives do, and how they are checked, takes most of the mystery out of the ingredients list.

What food additives are

A food additive is any substance added to food on purpose to do a particular job — to keep it safe for longer, stop it separating, give it colour, sweeten it, or improve its texture. Additives are not a modern invention: salting meat, smoking fish and pickling vegetables are all forms of food preservation that are thousands of years old. What has changed is that today's additives are identified, purified and regulated.

An E-number is simply a code given to an additive that has been evaluated and approved for use in the European Union, a system that Great Britain has retained. The "E" stands for Europe. So E300 is ascorbic acid — ordinary vitamin C, used as an antioxidant — and E160a is beta-carotene, the orange pigment found in carrots, used as a colour. The number and the chemical name describe the same thing; the code is just shorthand for the label.

What additives are for

Additives are grouped by the job they do. The main categories are:

  • Preservatives stop food spoiling by slowing the growth of bacteria, moulds and yeasts. They are a genuine safety tool: nitrites in cured meats, for example, help prevent botulism.
  • Antioxidants stop fats turning rancid and cut foods browning. Vitamin C (E300) and vitamin E (E306) are common examples.
  • Colours restore colour lost in processing or make food look more appealing.
  • Sweeteners provide sweetness with few or no calories — used in "diet" drinks and sugar-free products.
  • Emulsifiers and stabilisers keep ingredients that would naturally separate — like oil and water — smoothly mixed. Lecithin (E322), found naturally in egg yolk and soya, is a classic emulsifier.
  • Flavour enhancers boost an existing taste. Monosodium glutamate (E621) is the best known.
  • Acidity regulators, anti-caking agents and raising agents adjust pH, stop powders clumping, and help baked goods rise.

How additives are tested for safety

This is the part that reassures most people once they understand it. An additive cannot legally be used in food unless it has been assessed as safe. In the EU that assessment is done by the European Food Safety Authority (EFSA); in the UK the Food Standards Agency and its independent expert committees take that role.

Scientists review the evidence on a substance and, where possible, set an Acceptable Daily Intake (ADI) — the amount a person could consume every day across their whole life with no appreciable risk. Crucially, the ADI is set with a large safety margin, typically a hundred times lower than the highest dose shown to cause no effect in testing. Approvals are also kept under review: EFSA has re-evaluated additives that were authorised decades ago, and some have had their permitted uses tightened as a result.

An E-number is not a sign that something has been sneaked into your food. It is a sign that the substance has been named, assessed and limited by regulators.

The additives that do carry warnings

Saying additives are regulated is not the same as saying every one is beyond question. A well-known example is a group of six food colours — sometimes called the "Southampton colours" after the study that prompted action — which UK and EU rules require to be labelled with the statement that they "may have an adverse effect on activity and attention in children". The colours remain legal, but the warning allows parents to avoid them if they choose, and many manufacturers have reformulated to drop them.

Other additives are restricted to particular foods or maximum levels. Some sweeteners are not recommended in large amounts for young children. None of this undermines the system — if anything it shows it working, by attaching conditions where evidence suggests caution.

Reading the label

You do not need to memorise hundreds of codes. A few habits help:

  • Ingredients are listed by weight, most first. If sugar or salt is near the top, that tells you more about the food than any E-number.
  • The additive's job is usually named before the code, as in "preservative (E202)", so you can see what it is doing.
  • Allergens are highlighted (often in bold) by law, which matters far more for most people than additives do.
  • "No artificial colours or preservatives" is a marketing claim, not a guarantee of healthiness — a biscuit is still a biscuit.

One last myth is worth puncturing. People often assume "natural" additives are safe and "chemical" ones are not. But everything is made of chemicals, including water and vitamin C. Some perfectly safe additives have intimidating names, while some natural substances are toxic. The source of an additive does not decide whether it is safe — the evidence on that specific substance, and the amount you consume, do. Vitamin C is no less an antioxidant when it is written as E300.
