Few phrases have travelled from nutrition journals to dinner-table conversation as fast as "ultra-processed foods." It appears on news bulletins, on packaging, and in worried questions about whether the contents of an ordinary supermarket are quietly harming us. The term is genuinely useful — but it is also widely misunderstood, often used as a synonym for "unhealthy" or even just "packaged." Here is what it actually means, where it comes from, and what the evidence does and does not tell us.

What ultra-processed foods are
Ultra-processed foods (UPFs) are industrially manufactured products made largely from substances derived from foods — refined oils, starches, sugars and protein isolates — combined with additives such as emulsifiers, artificial sweeteners, flavourings, colourings and preservatives. A useful rule of thumb: if a product's ingredient list is long and contains things you would never keep in a home kitchen, it is probably ultra-processed.
Typical examples include fizzy drinks, mass-produced sliced bread, packaged biscuits and cakes, many breakfast cereals, crisps and other packaged snacks, instant noodles, reconstituted meat products like some sausages and nuggets, and many ready meals. Crucially, the definition is about how a food is made, not how many calories or how much fat or sugar it contains.
The NOVA classification
The term comes from NOVA, a classification system developed by researchers in Brazil that sorts foods by their degree and purpose of processing rather than by their nutrients. NOVA has four groups:
- Unprocessed or minimally processed foods — fruit, vegetables, eggs, milk, plain meat and fish, dried pulses, plain yoghurt. Minimal processing means things like washing, chilling, freezing or drying, with nothing added.
- Processed culinary ingredients — oils, butter, sugar and salt: substances extracted from group 1 and used to cook and season.
- Processed foods — relatively simple products made by adding group 2 ingredients to group 1 foods, such as tinned vegetables, cheese, fresh bread and home-style cured meats. Usually two or three recognisable ingredients.
- Ultra-processed foods — industrial formulations with five or more ingredients, typically including additives and substances rarely used in home cooking.
The system's value is that it captures something nutrient labels miss: that how a food is built may matter, not just what nutrients it contains.

Processing is a spectrum
The single most important thing to understand is that processed and ultra-processed are not the same thing. Almost all the food we eat is processed in some way, and much of that processing is helpful. Freezing peas locks in nutrients. Canning beans makes cheap protein last for years. Fermenting milk gives us yoghurt. Pasteurising milk makes it safe. None of these are ultra-processing, and none are cause for alarm.
The problem the NOVA system tries to flag is not processing in general. It is a specific, modern category of industrially formulated products designed to be cheap, durable and extremely easy to over-eat.
So a tin of chopped tomatoes, a bag of frozen broccoli and a tub of plain yoghurt are processed and perfectly good. A neon energy drink and a packet of long-life sponge cakes are a different proposition. Lumping them together is the most common mistake people make with this topic.
What the evidence shows
Here the picture demands honesty. A growing body of research, largely observational, links diets high in ultra-processed foods with higher rates of obesity, type 2 diabetes, cardiovascular disease and other problems. These associations are consistent enough that bodies such as the British Heart Foundation take them seriously.
But observational studies have a built-in limitation: they show that two things occur together, not that one causes the other. People who eat a lot of UPFs may also, on average, exercise less, sleep worse, have lower incomes or eat fewer vegetables — and untangling the processing from everything else is genuinely hard. Researchers are now asking why UPFs might be harmful, with several non-exclusive theories:
- They are often energy-dense and easy to over-consume — engineered to be moreish, soft and quick to eat, so people take in more calories.
- They tend to be high in salt, sugar and unhealthy fats and low in fibre.
- They may displace whole foods, so you eat fewer vegetables, pulses and unrefined grains.
- Some additives and the physical structure of the food itself may have effects we do not yet fully understand.
The likely answer is "several of these at once," and the science is still very much in progress.
How to think about it sensibly
You do not need to memorise the NOVA categories or treat every packet as a threat. A calm, practical approach:
- Build meals around whole and minimally processed foods — vegetables, fruit, pulses, eggs, fish, plain dairy, wholegrains. This is the same advice as eating a balanced diet; the UPF lens just adds emphasis.
- Keep ultra-processed products as a smaller part of the picture rather than the foundation of every meal. Enjoying them sometimes is not a failure.
- Read the ingredient list, not just the front of the pack. A short list of recognisable ingredients is a good sign.
